Less is More

Ethan and I recently resolved to change our eating habits. We are not labeling ourselves 'vegan', 'vegetarian', 'ovo-latco-vego' or what have you. We are just simply trying to cut back on the amount of animal products, namely meat, that we ingest. We were spurred on down this road a few months back when E went to Japan and I spent some time at my parents.

Japanese people traditionally eat very little meat, no dairy, and lots and lots of vegetables. After 10 days of eating like that E said he'd never felt better.

Meanwhile I was at my 'vegan' parents' house for two weeks eating what they ate, and I felt great too.

I hate cooking with, or even just looking at raw meat in the first place so this wasn't as huge a change for me as it was for Ethan. But, after eating like this for a couple of months now I can truly say that neither of us miss it.

Sure we'll eat meat from time to time. We're flexible. I guess you could call us 'flexitarians'. Especially if we are at someone's house. But, I haven't bought meat for our family in over 3 months. Even if you don't think about the nutritional benefit of cutting meat out, you should definitely think about how your wallet will benefit. Prices are only going up.

Yeah, I think we'd call ourselves flexitarians, too. ;)

We did it a bit backwards... (ssh, don't tell Tim!) first no dairy, then no meat. Haha! BUT sometimes, we just so happen to eat a Costco hot dog. So, love the "flextarian" name, I will use it. But just to make hubs happy and unaware:),(I kid!) I always have chips and pico de gallo on hand. Now if we could just deal w/ my sweet tooth!

We ALWAYS have chips and salsa here at our house too. Our favorite is Jack's Fresh salsa from Cotsco. They have it at other stores, its just way more expensive.
E even puts it on his salads instead of dressing.

Sure I could make my own and save even more money.....I'm just too lazy

I have the sweet tooth in this family. Recently I heard about Agave Nectar. It is similar to honey but with a milder taste. Best thing is it's low glycemic impact on the blood. It is DELICIOUS. Disolves instantly in either cold or hot liquids. We do eat fish once or twice a week. Cut out all sodas,etc. I make a large pot of Rooibos herb TEA in my coffe maker, chill & add ice and Agave Nectar. Best cold drink ever...and so healthy! I had fancy company today and they loved it too :>)

Food processors help take the textures out of some veggies w/o cooking them too much. Seveal cups of fresh spinach can be whirled with tofu, seasoned and used as a spread on a wrap.
